Ingredients about Broccoli Soup:-
1 tbsp butter
A tbsp olive oil
1 medium sized onion, sliced
One stack of coriander, chopped
2 cloves of garlic
1 tsp chopped parsley
8 cups broccoli
2 cups of water
3 cups of vegetable broth
Salt to taste
Pepper as preferred
Heat butter and olive oil in a pan on a low flame and to that add all the chopped and sliced vegetables and give a stir till the vegetables are soft.
Then add broccoli to that and also add broth and water and bring the mix to a boil and make sure that the broccoli is completely cooked and soft so that can be easily be grinded.
Cool down the mix and puree it with a hand blender and then boil again the soup and add salt and pepper to it.
Serve this broccoli soup hot and garnish with coriande and coriander leaves and give your kid soup sticks with it to be dipped into the soup and be had.
